Lemon Cookies
Ingredients:
- 1 15.25 ounce package lemon cake mix
- 2 large eggs
- ⅓ c vegetable oil
- 1 tsp lemon extract or 1 tbsp lemon juice plus some lemon zest
- ⅓ c confectioners' sugar for decoration

Directions:
- Preheat the oven to 375° F (190° C).
- Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended.
- Working in batches, drop teaspoonfuls of dough into a bowl of confectioners' sugar. Roll dough in sugar until lightly coated, then place 2 inches apart onto ungreased cookie sheets.
- Bake in the preheated oven until the bottoms are light brown, 6 to 9 minutes.
And You Thought the Price of Eggs Was Too High!
Strawberries and melons – two of our favorite fruits either in season or coming into season now in Arizona. Versatile and tasty, these two produce items offer plenty of culinary options like strawberry shortcake, homemade strawberry jam, prosciutto-wrapped or grilled melons, ingredients in a dinner salad, and a fruit salad, which all sound delicious right about now. We also get to enjoy some deals at the grocery store on them this time of year, which we can all agree is a welcome sight.

Another welcome sight is a clamshell of beautiful, big strawberries just begging to be dipped in chocolate. To get the most usable fruit for your money spent, turn the clamshell over and look carefully for any signs of injury to the berries, dried leaves or stems, or mold developing. Melons are a bit more difficult to judge because the fruit is hiding on the inside, but generally speaking, look for ones that are unblemished, feel heavy for their size, and have a more dull than shiny rind. Sometimes, no matter how much due diligence we do, our strawberries or melons just don’t cut the mustard, so to speak. Maybe if we were willing to spend more?
How much would you be willing to pay to have an expert grow, nurture, choose, pack, and ship you strawberries and melons? Elly Amai, based in Kyoto, Japan, can bring the finest of these two fruits directly to your door. They may also be available at very select markets, such as Erehwon in Los Angeles. One strawberry goes for $19.99 there! Unfortunately, currently an upscale food shop is the only option, as strawberries shipped directly from Elly Amai are sold out, including the modest $7 single strawberry all the way up to the much more extravagant pack of 16 for $70, both grown by Yajima Farms in Saitama Prefecture. Still available though is the $105 Japanese Musk Melon cultivated by Morita Farms in Chiba Prefecture. Of course, shipping is not included in these prices.
While we love strawberries and melons, we don’t plan to go the way of influencers procuring and tasting Elly Amai’s offerings, hoping to hop on the viral trend of this super expensive fruit.

Realtors Who Care are a group of 25 Real Estate agents who sell homes in Sun Lakes. We got together 3 years ago after Trish Kolb and Suzy Steinman were brainstorming on ways to give back to our community in an impactful way and that is when we partnered with Neighbors Who Care Director Sheryl Keeme. May 7th was our 3rd Spring luncheon for some our communities most vulnerable residents. We had a delicious lunch, ice cream with every topping you could imagine, and Music Bingo with DJ Jamal! A great time was had by all and every guest left with a gift basket.
