Recipe of the Month
Artichokes With Serrano Ham
This 20-minute meal comes together with only a few key (and affordable!) ingredients.
Ingredients:
- 1 lemon
- 1 ½ Lb. of small artichokes
- 4TBS extra virgin olive oil
- 8 slices of chopped Serrano Ham
- 3 Tbs of fresh parsley
- Coarse sea salt and fresh black pepper

Directions:
- Fill a sauce pan with water and squeeze in the lemon juice. Add squeezed halves of lemon and salt.
- Trim the stalk of each artichoke to ½ inch, then trim off all outer leaves until you reach the tender inner leaves. Cut artichoke in half lengthwise. Add to the pan of lemon water.
- Bring to boil and let simmer for 7 minutes until just tender. Drain and dry.
- Heat oil in fry pan, add artichokes and sauté for a5 minutes. Turn over and sauté the other side for 2 minutes. Add serrano ham and cook for 4 minutes until crisp and golden. Sprinkle with parsley and pepper.
